Variety: Garnacha 100%.
Zone: Wine from singular vineyard. Old vineyards of Cebreros-Sierra de Gredos.
Type of wine: Aged red wine.
Vineyard: Vineyard planted in 1961 at 1100 m. altitude. Plot of 1.3 ha. on slate soil with the parent rock very close to the plant and with the presence of a quartz vein running through the plot.
Vinification: The grapes vatted with part of the grape skins in concrete tanks. The fermentation kinetics are slow and the vatting lasted 45 days. The pressing was light and the wine went directly into a 2000 l. foudre, where it rests for 14 months when it is racked and bottled without filtering.
Tasting notes: Deep cherry red color. Aromas of thyme and wild lavender predominate at first, and with some time in the glass, the slate and earthy sensation emerge. On the palate the mountain aromas persist and the elegant and strong tannin gives structure and length. A serious, fresh wine.
